Soups: Chicken Soup
Ingredients
- ½ kilo of chicken pieces
- Oil
- 3 teaspoons of ground red chili
- ½ cup of pre-cooked peas
- 1 ear of corn (kernels)
- ½ cup of rice
- 1 chopped onion
- 2 potatoes
- 1 tablespoon of minced garlic
- 3 eggs
- 1 ½ cups of water or chicken broth
- ½ cup of evaporated milk
- Oregano, salt, pepper, ground cumin
- 1 tablespoon of chopped cilantro
Preparation
In a large pot, heat the oil and sauté the chopped onion, garlic, pepper, cumin, oregano, and ground red chili. Once everything is well sautéed, add the potatoes cut into pieces and the broth or water. Simmer over low heat for 10 minutes and then add the rice, chicken pieces, and corn kernels. When the potatoes are cooked, add the chopped cilantro and pour in the lightly beaten eggs in a thin stream, stirring well to incorporate them into the preparation. Finally, before serving, add the peas and milk.
