Chicken: Queen Chicken
Ingredients
- 2 cups boiled chicken, diced
- 3 tablespoons margarine
- 2 tablespoons green bell pepper, diced
- 2 teaspoons flour
- 1 cup milk or cream
- ½ teaspoon salt
- Pepper to taste
- ¼ teaspoon paprika
- 2 egg yolks
- 1 cup chicken broth
- ½ cup mushrooms, quartered
- 2 tablespoons sherry
Preparation
Melt the margarine in a pan over low heat. Add the diced bell pepper, paprika, and mushrooms. Stir until cooked. Remove and set aside. In the same pan, add the flour and mix well with the fat. Gradually add the milk, stirring until a slightly thick white sauce forms.
Lightly beat the egg yolks and add a little of the white sauce to them, mix well, and then combine with the rest of the sauce in the pan. Add the diced chicken, salt, and pepper, and heat through. Remove from heat and add two tablespoons of sherry. Add the pepper and mushroom mixture, and a little broth if the sauce is too thick. Heat without boiling and serve with white rice.
