Desserts: Sweet Humitas
Ingredients
- 6 ears of corn
- 3 tablespoons of margarine
- 1 cup of milk
- ½ cup of sugar
- 1 teaspoon of cinnamon
- ½ cup of raisins
- Dulce de leche for filling
- Corn husks and thick thread
Preparation
Remove the corn kernels and blend them with the milk. In a pot, melt the margarine and add the blended corn, sugar, cinnamon, and raisins. Cook over low heat until the mixture thickens and appears shiny. Let cool slightly and set aside. Soak the corn husks in boiling water to soften them. Drain and assemble the humitas in a rectangular shape: place a bit of dough on a husk, spread it out, add a layer of dulce de leche in the center, and cover with more dough. Wrap twice with husks in different directions and tie with string as if it were a small package. Place the corn cobs in the bottom of a pot with a little water. Arrange the humitas on top and cook with the pot covered for 20 minutes. Remove the husks before serving.
