Soups: Boiled Meat Soup
Ingredients
- 1 ½ kg of beef in chunks
- 2 celery stalks
- 1 turnip
- 8 peeled potatoes
- ½ kg of peeled yucca
- 8 leeks
- 1 large tomato
- 4 boiled corn cobs, cut in half
- 2 carrots
- ½ small cabbage
- ½ kg of cooked yellow sweet potatoes with skin
- 4 bananas
- 200 g of olives
- 1 large onion
- Salt to taste
Preparation
In a pot, bring about 2 liters of water to a boil. When boiling, add the meat. Boil for 1 minute and remove the foam. Add salt, carrots, tomato, turnip, and celery. Simmer over low heat for 15 minutes, then add the potatoes, yucca, leeks, cut and washed cabbage, and the onion.
Once the vegetables are cooked, remove them and keep them warm. Let the meat continue to cook until it becomes tender. Once the meat is done, remove and set it aside. Strain the broth and keep it warm.
Serve the different vegetables, the meat, potatoes, sweet potatoes, and corn on each plate, accompanied by an onion sauce. The broth is served separately.
