Beef/Lamb: Stuffed Peppers with Meat
Ingredients
- 8 bell peppers
- ½ teaspoon of cumin
- 2 eggs
- ½ teaspoon of ground chili pepper
- 4 tablespoons of grated Parmesan cheese
- 1 ½ medium onions
- 2 small tomatoes
- 4 garlic cloves
- beef broth
- oil
- ¾ kilo of ground beef
- 3 slices of bread soaked in broth
- dried oregano, salt, and pepper to taste
Preparation
Cut the bell peppers at the stem and remove all the seeds. Set aside.
Mix the raw meat with the beaten eggs, salt, pepper, ground cumin, oregano, bread soaked in broth and mashed, ½ finely chopped onion, grated cheese, and chili pepper. Mix well and stuff the bell peppers with this preparation. Set aside.
In a pot with oil, fry the rest of the onion, tomato, garlic, oregano, cumin, salt, and pepper without browning. Add a little broth and the remaining filling. Arrange the stuffed peppers and cook over low heat. The sauce should be thick. If you don't have any leftover filling, add some breadcrumbs to the sauce to thicken it. Serves 8 people.
