Beef/Lamb: Rib Roast in Wine
Ingredients (for 4 people)
- 2 kg of beef short ribs
- 4 tablespoons of oil
- 2 chopped onions
- 4 crushed garlic cloves
- 2 tablespoons of chopped parsley
- salt, pepper
- 2 glasses of red wine
Preparation
In a bowl, mix the onions with the crushed garlic, parsley, salt, pepper, and wine. Submerge the meat in this preparation and let it marinate for a few hours. Place the strips of meat in a large pot with the ribs facing down. Baste with the marinade throughout the cooking. Once browned on one side, flip the meat and let it cook for a few more minutes. Serve hot, accompanied by golden boiled potatoes and onion salsa.
