Pork: Pork Croquettes

Soak the bread in ½ cup of milk. Set aside. In a bowl, mix the ground pork, margarine, flour, parsley, and soaked bread, without the milk. Add salt and pepper, and let the mixture rest for half an hour.

Form eight croquettes or patties, dip them first in beaten egg, then in bread crumbs. Fry them in hot oil until well browned. Serve hot with white rice and a tomato salad.
