Cold Starters: Huancaina Potatoes
Ingredients
- Boiled potatoes (2 per person)
- 4 yellow chili peppers
- 1 pack of soda crackers
- 150g of fresh cheese
- ¼ cup of evaporated milk
- Oil (as needed)
- Salt to taste
Preparation
Clean the yellow chili peppers by removing the seeds and veins to reduce the spiciness. Boil them in a little water and peel off the skin. Blend with the rest of the ingredients: fresh cheese, milk, salt, crackers, and oil until you get a smooth cream. Place the boiled potatoes cut into slices on a lettuce leaf and pour the cream over them. Garnish with hard-boiled eggs and olives.
