Fish/Seafood: Seafood Chaufa
Ingredients
- 1 kg of cooked white rice
- 2 dozen clams
- ¼ kg of shrimp
- 2 dozen snails
- 3 dozen scallops
- 1 bunch of green onions
- ¼ kg of octopus
- 1 teaspoon of ground garlic
- ½ cup of fish broth
- Chinese cinnamon
- 3 eggs
- 1 teaspoon of ginger (kión)
- Soy sauce
- Sesame oil
Preparation
In sesame oil, sauté the garlic and ginger, then add the ½ cup of broth. Wash and chop the seafood well, then add them to the mixture. Adjust the salt. Let cook for 3 minutes.
Meanwhile, prepare an omelette with the eggs. Cut it into small squares and set aside.
Add the finely chopped green onions to the first preparation. Add the chopped omelette. Mix this preparation with the cold rice and a little soy sauce.
