Ingredients
- Fish backbone and heads from 2 fish
- Celery
- 1 large onion
Preparation
In a pot, place 3 liters of water, 2 celery stalks, the onion cut into quarters, and the fish backbones and heads. Simmer for 40 minutes, skimming off the white foam that forms on the surface. This broth serves as a base for preparing various dishes.
