Sauces: Rocoto Cream
Ingredients
- 1 large rocoto pepper
- 1 stalk of celery, chopped
- 2 soda crackers
- 2 cloves of garlic
- 3 tablespoons of oil
- 1 lemon
- 2 tablespoons of water
- Salt
Preparation
Wash the rocoto peppers thoroughly, cut them in half, and remove the seeds and some of the veins. Clean the inside well.
In a blender, combine the rocoto, oil, water, lemon juice, celery, crackers, and a pinch of salt. Blend until a smooth cream is formed.
This spicy sauce is perfect for accompanying all types of dishes: soups, meats, pork, chicken, and fish.
