Beef/Lamb: Mondonguito
Ingredients
- ½ kg of tripe
- 1 carrot
- 1 tomato
- 1 onion
- 2 tablespoons of ground garlic
- ½ teaspoon of pepper
- ½ kg of French fries
- 1 turnip
- ½ head of celery
- ½ cup of peas
- 1 bay leaf
- 1 tablespoon of paprika
- Salt to taste
- Water
Preparation
Wash the tripe well, removing all the fat. Boil it in salted water until cooked. Then cut it into strips about 2 cm wide and 3 cm long. Set aside.
Cut the carrot, celery, and turnip into julienne strips (lengthwise) and set aside. Cook the peas by dropping them into boiling salted water. Once cooked, remove them and pass them under cold water. Keep them in cold water.
In a pot, add oil and fry the finely chopped onion and tomato, garlic, pepper, paprika, bay leaf, and salt. Once everything is well fried, add the tripe and vegetables with a bit of water to cook them. Let it reduce and adjust the salt. Then add the French fries and cooked peas. Mix well and serve with white rice.
Optional: sprinkle with Parmesan cheese when serving.
