Hot Starters: Fried Yucca
Ingredients
- 1 kg of boiled cassava (yuca)
Sauce
- 300 grams of fresh cheese
- 4 green chili peppers, without veins and seeds, blended
- 1 cup of evaporated milk
- ¼ cup of oil
- 2 cloves of garlic, minced
- 50 grams of roasted peanuts
- 5 soda crackers
- Salt and pepper to taste
Preparation
Peel and boil the cassava, cut it into small elongated pieces, and fry them in plenty of oil until golden brown. Serve hot, accompanied by ocopa sauce, huancaína sauce, guacamole, or your preferred sauce.
Sauce
Blend the cheese with the chili, milk, garlic, crackers, peanuts, and salt to taste. To thicken the sauce, add more crackers.
