Pork: Pork Adobo
Ingredients
- 1 kg of pork, cut into pieces
- 1 teaspoon of pepper
- 1 teaspoon of cumin
- 2 tablespoons of ground garlic
- 3 tablespoons of ground red chili pepper (ají colorado)
- ¼ cup of vinegar
- Salt to taste
- 1 tablespoon of dried oregano
- 1 cup of chicha de jora
- 1 medium onion, sliced lengthwise
Preparation
Prepare a marinade with the pepper, cumin, garlic, chili pepper, vinegar, salt, oregano, and chicha de jora. Add the pork pieces and let them marinate overnight. The next day, fry the pork pieces in a pot with a little oil. Add the marinade liquid and the sliced onion. During cooking, add water if necessary until the pork is fully cooked. Check the salt and if it is too acidic, add a teaspoon of sugar.
Serve as a soup in a deep dish with the broth, accompanied by bread.
