Chicken: Chicken with Pineapple
Ingredients
- 1 chicken, cut into pieces
- 1 pineapple
- 1 teaspoon of pepper
- 1 teaspoon of ground cumin
- 1 tablespoon of minced garlic
- 1 tablespoon of potato starch
- Sugar
- 1 bell pepper
- 2 tablespoons of ketchup
- Salt
Preparation
Peel the pineapple, cut it into slices, and remove the core. Place it in a saucepan with some sugar and water, and cook until tender. Remove from heat and let it rest.
Prepare a paste with the garlic, salt, pepper, and cumin. Rub the chicken pieces with this mixture and let marinate for 15 minutes.
In a hot pan with oil, brown the chicken pieces to seal them. Remove from the heat and set aside.
In a pot with some oil, add the ketchup and stir well. Add the pineapple with its liquid and the chicken pieces to finish cooking. Add the bell pepper cut into thick strips and simmer on low heat. Once the chicken is cooked, add the potato starch dissolved in water, stir well, and cook for 1 minute until thickened. Serve with white rice.
