Beef/Lamb: Spicy Liver
Ingredients
- 1 kilo of liver steaks
- 2 medium onions
- oil
- 2 tablespoons of tomato purée
- 1 fresh chili pepper
- 2 tablespoons of pickled gherkins
- 1 large peeled tomato
- 4 large crushed garlic cloves
- salt and pepper
- 2 white potatoes
- 2 cups of vinegar
- ½ teaspoon of ground cumin
- ½ cup of water or broth
Preparation
In a container, mix the salt, pepper, cumin, 2 crushed garlic cloves, and vinegar. Marinate the liver steaks in this mixture for two hours. Drain and set aside. In a pot with hot oil, fry the steaks, chopped onions, chopped tomato, chili pepper cut into strips and seeded, salt, and pepper. Fry well, then add the garlic, tomato purée or sauce, pickled gherkins, peeled and diced potatoes. Stir and add 2 tablespoons of the marinade and a bit of water. Cook over low heat and serve with white rice. Serves 8 people.
