Beef/Lamb: Beef Stew
Ingredients
- ¾ kg of meat, cut into large pieces
- 1 chopped onion
- 1 small tomato
- 1 teaspoon of pepper
- 1 teaspoon of cumin
- 1 teaspoon of ground garlic
- 1 teaspoon of turmeric (palillo)
- ½ cup of fresh blended cilantro
- ¼ cup of cooked peas
- 1/8 cup of strong chicha de jora (fermented corn drink)
- ½ cup of cooked peas
- 3 tablespoons of ground chili pepper
- 4 potatoes, quartered
Preparation
Heat the oil in a pot and fry the onion, garlic, pepper, cumin, turmeric, ground ají mirasol, and cilantro. When well fried, add the meat, potatoes, and salt. Stir and add the chicha. Cover with water and cook over low heat. Once the meat and potatoes are cooked, add the peas. Serve accompanied by white rice.
