Beef/Lamb: Cau Cau
Ingredients
- 1 kilo of diced potatoes
- Oil
- ½ kilo of diced tripe
- 1 chopped onion
- 1 teaspoon of ground garlic
- 1 level teaspoon of ground cumin
- 1 level teaspoon of pepper
- 1 level teaspoon of turmeric
- Chopped fresh mint
- 4 tablespoons of ground yellow chili pepper
- Salt
- ½ cup of water
Preparation
Thoroughly wash the tripe, removing all the fat, and boil it without salt in a pot with water covering it, along with a sprig of mint. Fry the onion with cumin, pepper, garlic, ground yellow chili pepper, turmeric, and salt. Once everything is well fried, add the diced and cooked tripe, raw diced potatoes, and cover with water. Boil until the potatoes are cooked, then sprinkle with chopped mint and adjust the salt.
Serve with white rice.
